Propyl disulfide has a strong onion- and garlic-like aroma and is an important food flavoring agent. It occurs naturally in cabbage, onions, garlic, and roasted peanuts, and is used in the formulation of various food flavorings; its use in seasoning flavorings is particularly widespread.
Physical and Chemical Properties
A transparent, colorless to pale yellow liquid; it has a pungent, sulfur-like odor, as well as a sharp, irritating aroma reminiscent of onions and garlic; it is practically insoluble in water but soluble in ethanol. It has a foul odor.
