
Chemical Properties
1. A colorless to yellow, free-flowing, oily liquid with a strong, volatile, cool minty odor and a pungent, spicy aroma similar to that of fresh onions. Slightly soluble in water; soluble in ethanol, propylene glycol, and oils.
2. The natural form is found in fresh onions and cruciferous vegetables.
Uses
Dimethyl trisulfide is used in food flavorings for seasonings, gravies, soups, and other foods. It is listed as a permitted food flavoring in China’s GB 2760–1996.
