
Chemical Properties
1. It has an unpleasant odor resembling garlic or skunk. When diluted (<0.02 mg/kg), it exhibits aromas reminiscent of fat, braised beef, tenderly cooked onions, eggs, coffee, and garlic. It is slightly soluble in oils, slightly soluble in water (0.6 g/100 mL), and soluble in ethanol.
2. The natural form is found in Cheddar cheese, boiled eggs, cooked or fried beef, and beer, among other foods.
Uses
1. Specified as a permitted food flavoring agent in China’s GB 2760-96. It is primarily used in products such as cheese, beef, eggs, onions, and garlic.
2. Organic synthesis intermediate; warning agent.
3. Used in the synthetic rubber industry.
4. Used as a solvent and organic synthesis intermediate.
