
Olfactory Characteristics
At high concentrations, it exhibits a strong, fatty aroma blended with the characteristic meaty scents of roasted pork and chicken. When diluted to a low concentration of 1 mg/kg, it transforms into a distinctive, fresh, green aroma reminiscent of cucumbers and melons, which occurs naturally in ingredients such as melons, peaches, tomatoes, and soybeans.

1. Food Flavoring: FEMA No. 3213, listed as an approved food flavoring under China’s GB 2760 standard. It is primarily used in the formulation of cucumber, melon, mushroom, meat, and poultry flavorings, with a compliant maximum usage limit of approximately 0.2 mg/kg in various food products.
2. Personal Care Fragrancing: Added to personal care fragrances as a characteristic green note, it enriches the waxy texture and natural fruit and vegetable layers of the scent profile, making it suitable for specialty personal care product formulations.
3. Research Applications: Used as a biochemical reagent in life science research; it is also a characteristic product of fatty acid oxidation in the human body and is directly related to the “old-age odor” that develops with age.
Storage Requirements
Store in a sealed container, protected from light, in a cool, dry, and well-ventilated environment at 2–8°C. This substance oxidizes easily upon contact with air and is classified as an irritant; keep it away from strong oxidizing agents. Store and transport in accordance with regulations to prevent prolonged exposure to air, which can cause oxidation and deterioration.
