Physical and Chemical Properties
1. Possesses a sulfur-like, herbaceous aroma reminiscent of horseradish and watercress
2. Sensitive to moisture; must be stored in a water-free, inert gas environment to remain stable
Main Uses
1. As an approved food flavoring agent, it is used in the formulation of mustard, horseradish, and vegetable-flavored food flavorings
2. In scientific research, it serves as a potent antifungal agent that significantly inhibits the germination of Aspergillus spores and the growth of mycelium
3. In organic synthesis, it functions as a key intermediate for pharmaceutical and pesticide derivatives and is also used for protein modification in biochemical experiments
Safety and Storage
1. Harmful if inhaled, in contact with skin, or if swallowed; irritates the eyes, skin, and respiratory tract; may cause sensitization upon inhalation
2. Store in a sealed, argon-flushed container at a low temperature of 2–8°C; keep away from heat sources and open flames; store separately from strong oxidizing agents and food ingredients
3. Wear full protective gear during handling; perform operations in a fume hood; direct skin contact is strictly prohibited
