Chemical Properties
A colorless or slightly yellow, transparent liquid. It has a strong, aromatic scent reminiscent of bananas and pears. It is readily soluble in organic solvents such as ethanol and diethyl ether. It is practically insoluble in water, propylene glycol, and glycerol.
Uses
1. Isoamyl butyrate is a food flavoring permitted for use in China. It is commonly used in the formulation of fruit-flavored food flavorings, such as apple and banana, as well as in the flavoring of rum, with usage quantities determined by normal production requirements.
2. It is primarily used in the formulation of flavorings such as banana, pineapple, apricot, cherry, and mixed fruit.
3. It is widely used in the formulation of various fruit juice food flavorings, such as apricot, banana, pear, and apple flavors.
