Odor:
At high concentrations, it has a slightly unpleasant, pungent odor; when diluted, it exhibits a typical sweet, creamy, buttery aroma characteristic of diacetyl and 2,3-pentanedione.
Applications:
1. As a food flavoring agent approved under China’s GB 2760 standard, it is used in the formulation of cream, butter, and nut-based food flavorings. According to FEMA regulations, the maximum permitted level in soft drinks, frozen desserts, and candies is 10 mg/kg.
2. As an organic synthesis intermediate, it is used in the production of pyrazine-based food flavorings and can also serve as a specialty organic synthesis building block for the preparation of fine chemicals.
Storage:
Store in a sealed container in a cool, dry, well-ventilated area away from light. Store in accordance with regulations for flammable liquids, keeping it away from open flames, high-temperature heat sources, and strong oxidizing agents. Avoid prolonged exposure to air to prevent oxidation and deterioration.
