
Chemical Properties
1. A yellowish-brown liquid with aromas of almonds, nuts, yeast, milk, and sweet caramel. Insoluble in water; soluble in ethanol, diethyl ether, and propylene glycol.
2. The natural form is found in the volatile aromatic components of coffee, tomatoes, beer, green tea, raisins, and potato chips, among others.
Uses
1. Specified as a permitted food flavoring agent under China’s GB 2760–1996. Used in flavorings for almond, nut, baked goods, brown sugar, and bread.
2. Used as a raw material for organic synthesis and as a pharmaceutical intermediate.
