1. Pyrazine is primarily used as a flavoring agent, a flavor intermediate, and a pharmaceutical intermediate. It is a new type of food flavoring used in flavorings for cocoa, coffee, malted milk, and dairy products, as well as in flavorings for peanut, butter, and avocado flavors. Pyrazine is primarily found in French fries, Romano cheese, hard-boiled eggs, fried chicken, grilled beef liver, and grilled pork liver; it is classified as a nature-identical flavoring (a flavoring obtained through chemical synthesis that corresponds to natural aroma components found in plants and animals intended for human consumption).
2. It is primarily used in the synthesis of various flavorings for meat, chocolate, peanuts, and popcorn, among others. Additionally, it serves as an intermediate in the synthesis of various pharmaceuticals and pesticides, such as the antituberculosis drug pyrazinamide, the diuretic amipyridylguanidine, and the oral antidiabetic drug glipyridamine.
3. It is used in the manufacture of resins, polymers, and pharmaceuticals.
