
Chemical Properties
A colorless liquid with aromas of mold, grass, vegetables, nuts, pepper, potatoes, and fresh legumes. It is soluble in water, organic solvents, and oils, and is miscible with ethanol at room temperature. The natural form is found in green peas, sherry, and other sources.
Uses
1. Specified in China’s GB 2760–1996 as a food flavoring temporarily permitted for use. Used in the formulation of flavorings for coffee, cocoa, potatoes, mushrooms, and vegetables.
2. Used in vegetables, alcoholic beverages, baked goods, and other products.
3. Used as a fragrance in consumer cosmetics, imparting a fresh, clean scent.
