
Chemical Properties
A colorless to pale yellow liquid with a coffee- and nut-like aroma. Soluble in water (though it causes cloudiness), soluble in oils and organic solvents, and miscible with ethanol at room temperature. Boiling point: 203°C. The natural form is found in coffee, hazelnuts, potato products, and other foods.

1. Designated as a permitted food flavoring.
2. Used in coffee, meat products, confectionery, and other foods.
