Odor
A characteristic, chrysanthemum-like, fresh aroma with high odor recognition; it is one of the typical flavor compounds produced during the Maillard reaction.
Core Applications
1. Food Testing: As a key quality indicator in food thermal processing, it is used to assess the freshness and degree of heat exposure in honey, fruit juices, baked goods, and sugary beverages; it is an internationally recognized marker for food quality evaluation.
2. Chemical Synthesis: As a key platform compound, it is used to synthesize fine chemicals such as furan-2,5-dicarbaldehyde. It can also be used to prepare new polymeric materials such as biodegradable resins, bio-based plastics, and diesel fuel additives, making it a core intermediate in the field of biomass conversion.
3. Pharmaceutical Research: As a pharmaceutical synthesis precursor, it is used to prepare antiviral drugs and cardiovascular-related active ingredients. It also serves as a characteristic activity indicator for medicinal herbs such as Cornus officinalis in traditional Chinese medicine and is widely used in pharmacological activity screening experiments.
4. Personal Care Fragrances: It is approved for use in the formulation of certain specialty personal care fragrances and can also be used as a flavor component in flavor system research for certain specialty foods.
Storage Requirements
1. Generally, store in a sealed, light-protected environment at 2–8°C. Some high-purity samples require refrigeration below 0°C. Avoid direct sunlight and keep away from high-temperature heat sources.
2. Store separately from strong oxidizing agents, acids, and alkalis; mixed storage is strictly prohibited. The storage area must be equipped with emergency spill containment facilities. During handling,
