Uses

1. This product is used as an emulsifier, solubilizer, stabilizer, dispersant, and fiber lubricant.

2. It serves as an O/W food emulsifier, either alone or in combination with Span 60, Span 65, and Span 80. It can be used in plant-based protein beverages, with a maximum usage level of 2.0 g/kg.

3. Used as a stabilizer, wetting agent, dispersant, antistatic agent, etc.

Identification Tests

Solubility: Soluble in water, ethanol, methanol, ethyl acetate, and acetone; insoluble in mineral oil. Determined according to Method OT-42. All are identical to Identification Methods 2 and 3 for “Polysorbate 20 (10024.)”. Gelation: Prepare a 60% (v/v) sample mixture; a gel-like substance should form at temperatures below room temperature. Saponification: Alkaline saponification of 100 g of the sample yields approximately 20 g of fatty acids and 78 g of polyols. The method is the same as Identification Method 5 in “Polyoxyethylene (8) Stearate (10021).”
