1. Used as a raw material for resins, plasticizers, surfactants, emulsifiers, and demulsifiers; may also be used as an antifreeze and heat transfer fluid

Carrier solvent; wetting agent; humectant; anti-caking agent; antioxidant; texture improver; surfactant; stabilizer; thickener; dough conditioner; emulsifier; flavoring agent; excipient; processing aid. Listed as a food processing aid in GB 2760-96. Primarily used as a solvent for various flavorings, colorants, and preservatives, as well as an extraction solvent for vanilla beans, roasted coffee beans, and natural flavorings. They serve as humectants and softeners in candies, bread, packaged meats, and cheeses. They can also be used as anti-mold agents in noodles and filled pastries. When added at 0.006% to soy milk, it preserves the flavor during heating, produces pure white, glossy packaged tofu, and causes the tofu to expand in volume when pan-fried.
4. As a solvent, it can dissolve food additives that are poorly soluble in water—such as preservatives, colorants, and antioxidants—before they are added to food; it has strong hygroscopic properties and provides moisture retention and freeze protection for food. In China, it is approved for use in pastries, with a maximum usage level of 3.0 g/kg.
