At temperatures above its melting point, it is soluble in methanol, ethanol, toluene, diethyl ether, ethyl acetate, aniline, petroleum ether, and carbon tetrachloride; it is insoluble in cold water but dispersible in hot water. HLB value is 8.6. LD50 in rats is 10 g/kg; ADL is 10–25 mg/kg (FAO/WHO, 1994).
Uses:
1. As a nonionic food emulsifier, used alone or in combination with Tween-60, Tween-65, and Tween-80. It is approved for use in ice cream and chocolate, with a maximum usage level of 2.2 g/kg; in plant-based protein beverages and fruit-flavored beverages, the maximum usage levels are 2.0 g/kg and 0.5 g/kg, respectively; and in moon cakes, the maximum usage level is 1.5 g/kg.
2. As an emulsifier and wetting agent
